Ingredients
- 400 grams medium fresh button mushrooms, quartered
 - 2 tablespoons lemon juice
 - Salt to taste
 - 1 medium tomato, seeded, 1 centimeter pieces
 - 1 medium cucumber, 1 centimeter pieces
 - ¼ cup chopped fresh mint leaves + a sprig
 - 3 tablespoons skimmed milk yogurt
 - 4 to 5 cabbage or lettuce leaves
 
Method
- Take mushrooms in a thick-bottomed vessel along with lemon juice and a little salt. Stew them over low heat for ten minutes. Set aside.
 - Combine mushrooms with tomato, cucumber and fresh mint. Mix in skimmed milk yogurt and salt and toss lightly.
 - Serve on a bed of cabbage leaves or lettuce leaves garnished with a sprig of mint leaves.
