Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Lemon Rice With Vegetables Recipe

  • Lemon juice 2 tablespoons

  • Basmati rice soaked 1 1/2 cups

  • Cauliflower separated into small florets 1/2 small

  • Carrot grated 1 medium

  • Olive oil 3 tablespoons

  • Split Bengal gram (chana dal) 1 teaspoon

  • Split black gram skinless (dhuli urad dal) 1 teaspoon

  • Fenugreek seeds (methi dana) 1/4 teaspoon

  • Mustard seeds 1 teaspoon

  • Dried red chillies broken 2

  • Coconut scraped 2 tablespoons

  • Curry leaves 10-12

  • Salt to taste

  • Turmeric powder 1/2 teaspoon

  • Stuffed green olives 20-25

  • Lemon 1


Step 1

Heat olive oil in a large non stick pan. Add split Bengal gram, split black gram, fenugreek seeds, mustard seeds, red chillies and coconut and saute till fragrant. Add curry leaves and mix. Add cauliflower and carrot and mix.

Step 2

Drain and add rice along with salt, turmeric powder, lemon juice and 3 cups water and mix well.Add stuffed green olives and mix. Slice lemon into thin slices, remove seeds and add to the pan. Cover and cook till the rice is done. Serve hot.
