Ingredients list for Kolambi Bhaat
- 12-16 Basmati Rice
- 1 1/2 cups Prawns soaked
- 1/2 cup Fresh coriander leaves
Method
- Grind together coriander leaves, mint leaves, garlic, ginger, green chillies and ½ cup coconut with a little water to a smooth paste.
- Heat oil in a non-stick pan, add cinnamon, black cardamoms, star anise, cloves, cumin seeds and onions and sauté till onions turn a light brown.
- Marinate the prawns with juice of ½ lemon and salt. Add ground paste to the pan. Mix well and add prawns. Mix well so that the masala coats the prawns.
- Add rice and t3 cups water. Mix well and add salt. Mix again and squeeze the juice of the remaining ½ lemon half. Add coconut milk and mix again. Cover and cook till the rice is done.
- Switch off heat and let it stand for a few minutes before serving. Garnish with a little coconut and serve hot.
