The high plateau yields wonderful vegetables and the north is cattle country…..and to bind all these in one single string are chillies…in every shape, colour and size, from the subtle to the strong, producing a signature to Mexican cuisine.

Ingredients for Grilled Prawns With Pineapple Salsa Recipe

  • Prawns deveined 500 grams

  • Pineapple juice 1/2 cup

  • Olive oil 2 teaspoons

  • Oregano 1/2 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Salt to taste

  • Satay sticks soaked for grilling

  • Lemon juice 1 1/2 tablespoons

  • Red chilli flakes 1/2 teaspoon

  • Pineapple 1/2 cm cubes 1 Big

  • Red capsicum,seeded 1/2 cm cubes 1 medium

  • Cucumbers 1/2 cm cubes 2 medium

  • Onion chopped 1 large


Step 1

To prepare prawns whisk together pineapple juice, olive oil, dried oregano, red chilli powder and salt in a large bowl. Add the prawns and toss well. Marinate for thirty minutes.

Step 2

To make salsa whisk together lemon juice, red chilli powder, red chilli flakes and salt in a large bowl. Add pineapple cubes, capsicum cubes, cucumber cubes and chopped onion. Toss well to combine. Cover salsa and refrigerate until serving time.

Step 3

Preheat the griller, skewer prawns onto a satay stick and grill for three to four minutes on each side until cooked. Serve immediately with pineapple salsa.
