Ingredients

  • 2 cups fresh green peas
  • ½ cup mint leaves
  • 2 teaspoons butter
  • 1 tablespoon chopped garlic
  • 1 small onion, chopped
  • 2-3 fresh thyme sprigs
  • Salt to taste
  • 4 cups vegetable stock + to adjust consistency
  • Black pepper powder to taste
  • Fresh cream for garnish

Method

  1. Heat butter in a non-stick wok, let it melt. Add garlic and sauté till golden brown.
  2. Add onion and sauté till translucent. Add fresh thyme sprigs, green peas and salt, mix well.
  3. Add vegetable stock and let it come to a boil. Reduce the heat and cook till the peas are soft and cooked. Discard the thyme sprigs.
  4. Take it off the heat, add mint leaves and allow the mixture to cool slightly. Transfer mixture in a blender jar and blend to a fine puree.
  5. Add the puree into the same pan and place it back on heat. Add stock to adjust the consistency.
  6. Add black pepper powder and mix well. Let the soup come to a boil.
  7. Garnish with fresh cream and serve hot.
