German Beer Cheese Soup

The creamy cheddar cheese and beer broth is flavored with sautéed garlic, onions and carrots. A dash of Dijon mustard adds plenty of spunk to it.

Ingredients

  • 2 cups beer
  • ¼ cup shredded cheddar cheese
  • 4 tablespoons unsalted butter
  • 1 medium carrot, finely chopped
  • 1 large onion, diced
  • 2 garlic cloves, minced
  • ¼ cup refined flour (maida)
  • 1½ cups milk
  • ½ cup fresh cream
  • 1 tablespoon Dijon mustard
  • Crushed black peppercorns to taste
  • Salt to taste

Method

  1. Melt butter in a non-stick pan, add carrot, onion and garlic, mix and sauté for ten minutes. 
  2. Add flour and sauté, stirring frequently, till the flour turns golden.
  3. Combine milk and cream in a bowl and mix well. Add this to the flour mixture slowly and whisk till well combined.  
  4. Add beer and mustard and bring to a boil, whisking frequently. Reduce heat and simmer for ten minutes or till the mixture thickens. 
  5. Remove from heat, add cheese and crushed peppercorns. Mix well and adjust salt. 
  6. Serve hot.
