Ingredients
- 1½ cups shelled green peas
- 2 tbsps butter
- 1 medium onion, roughly chopped
- 2-3 garlic cloves, crushed
- 1 tbsp chopped leeks
- 2-3 iceberg lettuce leaves
- Salt to taste
- Black pepper powder to taste
- 7-8 fresh mint leaves
- Vegetable stock, as required
- 2 tbsps cream
- Few thin strips of red capsicum
Method
- Add green peas, lettuce leaves, 1 cup water, salt and pepper powder and mix.
- Add mint leaves and let the mixture come to a boil. Cover and cook for 2-3 minutes.
- Strain the peas and cool. Put them into a mixer jar and puree with a little cold stock.
- Pour this back into the pan and heat. Adjust salt.
- Add cream and mix.
- To serve place red capsicum strips in the center of a soup bowl, pour the soup all around it and serve hot.
