How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Elamcha Satham Recipe

  • Rice 1 1/2 cups

  • Lemon Juice to taste

  • Ghee 1 teaspoon

  • Onion sliced 1 small

  • Mustard seeds 1 teaspoon

  • Lemon juice 2 teaspoons

Method

Step 1

Bring three and a half cups of water to boil in a pan, meanwhile wash the rice thoroughly and drain. When the water starts to boil, add rice and salt to taste.

Step 2

Cook for ten to fifteen minutes or till the rice is done, drain off extra water if any. Put it back over the heat and cook for three to five minutes. Melt ghee in a pan, add sliced onion and fry until golden brown.

Step 3

Add mustard seeds and when they crackle add the mixture to the rice. Add lemon juice and stir well. Serve immediately.
