Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Dum Methi Murgh Recipe

  • Chicken cut into 2 inch pieces on the bone 750 grams

  • Kasuri Methi 2 teaspoons

  • ghee 2 tablespoons

  • black peppercorns 6-8

  • Green cardamoms 3-4

  • cloves 1-2

  • star anise 1

  • cinnamon stick 1 inch

  • black cardamom 1

  • green chillies slit 3-4

  • onion chopped 1

  • Garlic Paste 1 tablespoon

  • ginger paste 1 tablespoon

  • yogurt 3/4 cup

  • turmeric powder 1/4 teaspoon

  • Salt to taste

  • Almond Paste 2 tablespoons

  • Readymade dough for sealing

Method

Step 1

Heat ghee in a deep non-stick pan, add black peppercorns, green cardamoms, cloves, star anise, cinnamon stick, and black cardamom and sauté till fragrant.

Step 2

Add green chillies and sauté for a minute. Add onion, mix and sauté till translucent. Add garlic paste and ginger paste and sauté for 1-2 minutes.

Step 3

Take chicken in a bowl, add yogurt, turmeric powder and salt and mix well. Transfer this into the pan and sauté for 3-4 minutes on high heat.

Step 4

Reduce the heat, add almond paste and kasuri methi and mix well. Add ½ cup water and mix.

Step 5

Seal the rim of the pan with the dough and cover with a lid. Cook for 15-20 minutes, switch the heat off and transfer the gravy into a serving bowl. Serve hot.
