Corn was indigenous to America, but is now grown throughout the world. It is used as a vegetable, briefly boiled or roasted or eaten with butter. And it would also interest you to know that the favourite popcorn, made by popping the small corn kernels, is a wholesome cereal food and is easily digested. Besides this, corn sees its use in various other ways – salads, soups, subzis and even sweets too!

Ingredients for Corn Pepper Au Gratin Recipe

  • Tinned Corn Kernels 5-7 tablespoons

  • Milk 1 cup

  • Red bell pepper cut into ½ cm pieces 1 small

  • Yellow bell pepper cut into ½ cm pieces 1 small

  • Black peppercorns 3-4 tablespoons

  • Bay leaf 1

  • Cloves 3-4

  • Onion cut into ½ cm pieces, layers separated 1

  • Butter 1 tablespoon

  • Oil 3 teaspoons

  • Refined flour (maida) 1 tablespoon

  • Crushed black peppercorns to taste

  • Salt to taste

  • Garlic cloves chopped 4-5

  • Grated processed cheese 1/2 cup

Method

Step 1

Preheat the oven to 240°C.

Step 2

Heat milk in a deep non-stick pan, add peppercorns and bay leaf.

Step 3

Insert cloves into onion layer to make a clout and add to the pan. Let the milk simmer.

Step 4

To make white sauce, heat butter in a non-stick pan. Add refined flour, mix well and sauté taking care that the flour does not brown.

Step 5

Strain milk and add to the pan and keep whisking to avoid lumps. Cook till the sauce thickens, whisking continuously.

Step 6

Add crushed peppercorns, salt and one-fourth cup of cheese and mix well. Bring to a boil, remove from heat and set aside.

Step 7

Heat oil in another non-stick pan, add garlic and sauté till fragrant.

Step 8

Add capsicum, red pepper, yellow pepper and corn kernels and mix. Add salt and crushed peppercorns and mix. Sauté for a minute.

Step 9

Spread the sautéed vegetables in a glass baking dish. Pour the white sauce on top and top with the remaining cheese.

Step 10

Place the dish in the preheated oven and bake for three to four minutes or till the cheese melts and the surface turns golden.

Step 11

Serve hot.
