Ingredients list for Coconut and Lime Ice Cream
- 1/4 cup Fresh coconut scraped
- 1 tablespoon Coconut milk powder
- 1 tablespoon Lemon zest grated
- 1 litre Vanilla ice cream cut into 1 inch cubes
- 2 tablespoons Honey
- to garnish Fresh mint sprigs
Method
- Put vanilla ice cream cubes, coconut, coconut milk powder and honey in a blender jar. Grate zest of ½ lemon into the jar, cover it and blend till smooth.
- Transfer into an air-tight container, cover and freeze for 4-5 hours or till set.
- Scoop out ice cream and put into individual stemmed bowl. Grate some lemon zest on top of the ice cream scoops and serve immediately garnished with mint sprig.
