Coastal cuisine of India loves the coconut. Be it Goan or Malwani, Karnatak, Tamilian or from Kerala, the taste of coconut reigns supreme. Think about a rich fish curry and try making it obliterating the coconut! It will pass off as a fake. Very correctly termed as the ‘plant of life,’ each and every part of the coconut plant is useful in one or the other way.

Ingredients for Coconut Torte Recipe

  • Fresh coconut scraped 1 cup

  • Eggs 4

  • Butter to grease

  • Digestive biscuits powdered 1 cup

  • Sugar 1/2 cup

  • Cornflour/ corn starch 2 tablespoons

  • Condensed milk 1 cup

  • Milk (full cream) 1 1/2 cups


Step 1

Preheat the oven to 200°C. Separate the egg whites from the yolks. Grease a tart pan with butter. Put the powdered biscuits in the tart pan and spread it evenly. Press with your palms.

Step 2

Take cornflour in a bowl. Add two tablespoons sugar and mix. Add condensed milk and mix. Add one cup of milk and mix. Cook this mixture in a pan over medium heat stirring continuously.

Step 3

Beat the egg whites with the remaining sugar till stiff. Add coconut to the custard in the pan and mix. Add half a cup of milk or more to adjust the consistency which should not be too thick.

Step 4

Put this mixture over the biscuit base. Cover it with the stiffly beaten egg whites.

Step 5

Place the tart pan in the preheated oven and bake till the egg whites are lightly browned.

Step 6

Sprinkle some scraped coconut over the top and serve hot or chilled.
