Ingredients list for Christmas Creme Brulee

  • 2½ cups Cream
  • 4 Eggs
  • ½ cup Castor sugar (caster sugar) 75 grams +
  • 1 tablespoon Vanilla essence

Method

  1. Preheat oven to 180°C.
  2. Separate the egg yolks from the whites and put the yolks in a bowl. Add 75 grams castor sugar in the bowl and whisk well. Add vanilla essence and whish again to mix.
  3. Warm cream in a non-stick pan. Add this to the egg mixture and mix well.
  4. Pour the mixture into ramekin moulds and place them on a baking tray filled with water. Put the tray in the preheated oven and bake for 20-25 minutes.
  5. Remove from heat and set aside to cool to room temperature.
  6. Use ½ cup castor sugar to sprinkle evenly on the brulee and caramelize the sugar with the help of a blow torch till the crust becomes golden.
  7. Serve immediately.
