By Sanjeev Kapoor 06 Jul 2016 in Recipes Course New Update Advertisment Main Ingredients Boneless Chicken Breasts, Rice Cuisine Fusion, , , , Course Soups Prep Time 11-15 minutes Cook time 21-25 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Non Veg Ingredients list for Chicken and Rice Soup 200 grams Boneless Chicken Breasts cut into small cubes 1/4 cup Rice soaked and drained 1 tablespoon Oil 2 tablespoons Garlic chopped 1 tablespoon Celery chopped 1 medium Onion chopped 1 medium Carrot peeled and cut into small cubes 4 cups Chicken stock to taste Salt 1/2 teaspoon Crushed black peppercorns 1 teaspoon Red chilli flakes 2 tablespoons Chopped spring onion greens Advertisment Method Heat oil in a non-stick pan, add garlic and sauté for ten seconds. Add celery and onion and sauté till the onion turns light brown. Grind half the rice to a smooth paste with sufficient water. Add carrots to the pan and mix well. Add chicken, remaining rice and rice paste, mix well and sauté for a minute. Add stock, salt, crushed peppercorns and red chilli flakes, mix well and cook till both chicken and rice get cooked completely. Transfer into a serving dish, garnish with spring onion greens and serve piping hot.
