Ingredients list for Chicken and Rice Soup

  • 200 grams Boneless Chicken Breasts cut into small cubes
  • 1/4 cup Rice soaked and drained
  • 1 tablespoon Oil
  • 2 tablespoons Garlic chopped
  • 1 tablespoon Celery chopped
  • 1 medium Onion chopped
  • 1 medium Carrot peeled and cut into small cubes
  • 4 cups Chicken stock
  • to taste Salt
  • 1/2 teaspoon Crushed black peppercorns
  • 1 teaspoon Red chilli flakes
  • 2 tablespoons Chopped spring onion greens

Method

  1. Heat oil in a non-stick pan, add garlic and sauté for ten seconds. Add celery and onion and sauté till the onion turns light brown.
  2. Grind half the rice to a smooth paste with sufficient water.
  3. Add carrots to the pan and mix well. Add chicken, remaining rice and rice paste, mix well and sauté for a minute.
  4. Add stock, salt, crushed peppercorns and red chilli flakes, mix well and cook till both chicken and rice get cooked completely.
  5. Transfer into a serving dish, garnish with spring onion greens and serve piping hot.
