By Sanjeev Kapoor 04 May 2016 in Recipes Course New Update Main Ingredients Boneless chicken breasts , Olive oil Cuisine Italian Course Main Course Chicken Prep Time 6-10 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Easy Others Non Veg Ingredients list for Chicken Scallopini 4 Boneless chicken breasts 4 tablespoons Olive oil to taste Salt 1 teaspoon Dried parsley 1/4 teaspoon Dried thyme to taste Black pepper powder 2 tablespoons Refined flour (maida) 1 cup Feta cheese, grated 3-4 cloves Garlic, chopped 2 tablespoons Lemon juice 1 teaspoon Lemon zest to garnish Lemon wedges to garnish Fresh coriander leaves Method Slice each chicken breast into two. In a bowl mix together two tablespoons olive oil, salt, parsley, thyme and black pepper powder. Marinate the chicken breast for half an hour with the above mixture. Sprinkle the flour over them. Heat the remaining olive oil in a grill pan. Grill the chicken pieces until browned on both sides or till done. In another bowl mix together feta cheese, garlic, lemon juice and lemon zest and mix well. Coat the chicken with the cheese mixture and gratinate till the cheese melts.
