Ingredients list for Chicken Scallopini

  • 4 Boneless chicken breasts
  • 4 tablespoons Olive oil
  • to taste Salt
  • 1 teaspoon Dried parsley
  • 1/4 teaspoon Dried thyme
  • to taste Black pepper powder
  • 2 tablespoons Refined flour (maida)
  • 1 cup Feta cheese, grated
  • 3-4 cloves Garlic, chopped
  • 2 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • to garnish Lemon wedges
  • to garnish Fresh coriander leaves

Method

  1. Slice each chicken breast into two. In a bowl mix together two tablespoons olive oil, salt, parsley, thyme and black pepper powder.
  2. Marinate the chicken breast for half an hour with the above mixture. Sprinkle the flour over them.
  3. Heat the remaining olive oil in a grill pan. Grill the chicken pieces until browned on both sides or till done.
  4. In another bowl mix together feta cheese, garlic, lemon juice and lemon zest and mix well.
  5. Coat the chicken with the cheese mixture and gratinate till the cheese melts.
  6. Serve hot with lemon wedges and fresh coriander leaves.
