Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Cappuccino Of Mushrooms With Ground Spices Recipe

  • Button Mushrooms 400 grams

  • Mixed Spices 1 medium

  • Garlic cloves 6

  • Olive oil 3 tablespoons

  • Crushed black peppercorns to taste

  • sprigs thyme 2

  • Salt to taste

  • Black pepper powder to taste

  • Fresh cream 500 millilitres

  • Vegetable stock 600 millilitres

  • Butter 30 grams

  • Extra virgin olive oil 4 tablespoons

  • Cream, whipped 60 millilitres

  • Cumin seeds coarsely powdered 1 tablespoon

  • Coriander seeds coarsely powdered 1 tablespoon


Step 1

Slice mushrooms and onion and crush garlic cloves.

Step 2

Heat olive oil in a deep non stick pan, add garlic, crushed black peppercorns, thyme and onion and sauté till golden brown.

Step 3

Add mushrooms and sauté over high heat till golden brown.

Step 4

Add salt and black pepper powder and sauté for 1 minute.

Step 5

Add fresh cream and vegetables stock and cook till mushrooms soften.

Step 6

Transfer into a bowl and blend into a puree with a hand blender.

Step 7

Heat butter in another deep non stick pan and pour the puree in it. Add 2 tbsps extra virgin olive oil and mix well.

Step 8

Garnish with whipped cream, cumin powder, coriander powder and remaining extra virgin olive oil and serve hot.
