Cappuccino Of Mushrooms With Ground Spices Mushroom soup served garnished with whipped cream This recipe is from FoodFood TV channel By Sanjeev Kapoor 08 Nov 2016 in Recipes Course New Update Main Ingredients Button Mushrooms , Mixed Spices Cuisine Fusion Course Soups Prep Time 11-15 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Cappuccino Of Mushrooms With Ground Spices 400 grams Button Mushrooms 1 medium Mixed Spices 6 Garlic cloves 3 tablespoons Olive oil to taste Crushed black peppercorns 2 sprigs thyme to taste Salt to taste Black pepper powder 500 millilitres Fresh cream 600 millilitres Vegetable stock 30 grams Butter 4 tablespoons Extra virgin olive oil 60 millilitres Cream, whipped 1 tablespoon Cumin seeds coarsely powdered 1 tablespoon Coriander seeds coarsely powdered Method Slice mushrooms and onion and crush garlic cloves. Heat olive oil in a deep non stick pan, add garlic, crushed black peppercorns, thyme and onion and sauté till golden brown. Add mushrooms and sauté over high heat till golden brown. Add salt and black pepper powder and sauté for 1 minute. Add fresh cream and vegetables stock and cook till mushrooms soften. Transfer into a bowl and blend into a puree with a hand blender. Heat butter in another deep non stick pan and pour the puree in it. Add 2 tbsps extra virgin olive oil and mix well. Garnish with whipped cream, cumin powder, coriander powder and remaining extra virgin olive oil and serve hot.
