Italian cuisine has developed through centuries of social and political changes, with roots stretching to antiquity.  Italian cuisine is simple and a number of dishes having only four to eight ingredients.  They rely mostly on the quality of ingredients rather than elaborate preparation.
Noteworthy changes in Italian cuisine happened with the discovery of the New World and the introduction of potatoes, tomatoes, bell peppers and maize, which are now an integral part of this cuisine.  Italian cuisine is known for its regional diversity each with a distinct taste.  This cuisine today is probably one of the most popular in the world.

Ingredients for Biscotti Recipe

  • Unsalted butter softened 1/4 cup

  • Castor sugar (caster sugar) 1/2 cup

  • Refined flour (maida) 1 1/2 cups

  • Salt 1/4 teaspoon

  • Baking powder 2 teaspoons

  • Coriander powder 1 teaspoon

  • Lemon rind grated 1 teaspoon

  • Polenta 1/2 cup

  • Egg lightly beaten 1

  • Orange juice 1 teaspoon

  • Orange zest grated 1 teaspoon

  • Almonds 1/2 cup

  • Pistachios 1/2 cup


Step 1

Cream together butter and sugar in a bowl till smooth. Sift refined flour, salt, baking powder and coriander powder into the bowl with butter and sugar.

Step 2

Add the lemon rind, polenta, egg, orange juice and orange zest and mix together to make a soft dough. Stir in the almonds and pistachios and mix well.

Step 3

Halve the mixture and shape each half into a sausage. Place the sausages on a lightly greased baking sheet and keep in a warm place to prove. Preheat the oven 200°C.

Step 4

Bake the biscottis in the preheated oven for twenty five to thirty minutes or until the crust is firm. Allow to cool and then cut each biscotti into thin slices. Cool and then store in an airtight tin.
