What is the best thing one could rustle up in a hurry when hunger pangs are unbearable? The first thing that comes to mind is pasta! Believe it or not, it is the mainstay dish of all those who want a filling meal in a jiffy. What fascinates most food lovers is that it is available in a multitude of shapes, colours and now even flavours. The variety of shapes, sizes and designs include tubes, ribbons, spirals, shells, bows and wheels. Pleasures of pasta!

Ingredients for Basil Sunflower Seed Pesto Pasta Recipe

  • Whole wheat Penne Pasta boiled 200 grams

  • Olive oil 2 tablespoons

  • Cherry tomatoes halved 12-14

  • Salt to taste

  • Milk 1/4 cup

  • Red chillies crushed 1/2 teaspoon

  • Sunflower seeds (charoli/chironji) 1 tablespoon

  • Sunflower seeds pesto

  • Sunflower seeds (charoli/chironji) 1 tablespoon

  • Basil leaves 3/4 cups

  • Garlic cloves 3-4

  • Salt to taste

  • Parmesan cheese grated 4 tablespoons

  • Olive oil 2 tablespoons

Method

Step 1

Heat olive oil in a non stick pan, add halved cherry tomatoes and salt and sauté on low heat till they soften.

Step 2

Grind together basil leaves, garlic, salt, parmesan cheese, sunflower seeds and olive oil to a paste.

Step 3

Add boiled penne and ground paste to the pan and mix well. Add milk and mix well. Sprinkle crushed red chillies and mix.

Step 4

Transfer into a serving dish, sprinkle sunflower seeds and serve hot.
