Ingredients list for Baked Onions With Sun Dried Tomatoes

  • 500 grams Pearl onions peeled
  • 8-10 Sundried Tomatoes chopped
  • 1 tablespoon Olive oil
  • 8 cloves Garlic crushed
  • 10 Baby potatoes boiled and peeled , halved
  • 1/2 spring Fresh rosemary
  • to taste Salt
  • 1 teaspoon Black peppercorns crushed
  • 1/2 cup Fresh bread crumbs
  • 2 tablespoons Fresh parsley chopped

Method

  1. Preheat oven to 180° C. Heat olive oil in a pan and sauté garlic for half a minute. Gently toss onions, potatoes, adding fresh rosemary and sun dried tomatoes.
  2. Add salt and crushed peppercorns. Transfer into a baking dish. Top with fresh breadcrumbs and parsley. Bake at 180°C for twenty to twenty five minutes.
  3. Serve hot.
