A favourite with the vegetarians, paneer made from milk is quite common, especially paneer recipes are quite popular in the Indian subcontinent. You can make it fresh, chhena – an another version or just use the ones that are readily available in the market to prepare everything from simple snacks, curries, sabzis, mithais, desserts and the likes. An ingredient that can be relished in the raw form too – try serving it as a starter just sprinkled with a little chaat masala, black salt and chilli powder!

Ingredients for Baked Cheesy Eggs Recipe

  • Paneer (cottage cheese) grated 4 tablespoons

  • Eggs 4

  • Processed cheese grated 1/4 cup

  • Salt to taste

  • Crushed peppercorns for sprinkling 1/4 teaspoon

  • Crushed red chillies for sprinkling 1/2 teaspoon

  • Fresh cream 2 1/4 tablespoons

Method

Step 1

Cut brinjal into thin slices.

Step 2

To make batter, combine rice flour, cornflour, refined flour, pepper powder, salt and 1 cup ice cold water in a bowl. Whisk well ensuring that there are no lumps. Add drinking soda and whisk well into a pouring consistency batter.

Step 3

Heat sufficient oil in a wok.

Step 4

Dust spinach leaves in refined flour, dip in batter and coat well and deep-fry in hot oil till crisp. Similarly, repeat the procedure with brinjal slices, zucchinis and bell peppers. Drain on absorbent paper.

Step 5

Serve hot with sweet chilli sauce.
