Ingredients list for Apricot And Custard Ice Cream

  • 1 cup Dried apricots soaked and seeded
  • 2 1/2 cups Milk
  • 1 tablespoon Custard powder
  • 1/2 cup Fresh cream
  • 1/3 cup Sugar

Method

  1. Boil the apricots, cool them and set aside. Mix custard powder with half a cup milk.
  2. Boil the remaining milk with sugar in a non-stick pan. Add the custard powder mixture and simmer for three to four minutes till the custard is thickens. Strain the mixture and allow it to cool.
  3. Add cream and apricots and mix well. Pour into shallow containers, cover and freeze till almost set.
  4. Remove the mixture and blend it in a blender till smooth and thick.
  5. Transfer into the shallow container. Cover and freeze.
  6. Scoop and serve.
