Mexican Red Sauce

Popular Mexican sauce made with tomatoes, basil and garlic. This can be used as a base for many curries or can be served even as a dip. This is Sanjeev Kapoor exclusive recipe.

Ingredients

  • 4 tomatoes, blanched and chopped
  • 1 teaspoon red chilli powder
  • 1 teaspoon paprika powder
  • 1 tablespoon chopped fresh basil
  • 2 tablespoons butter
  • 2 tablespoons crushed garlic
  • Salt to taste
  • 1 tablespoon sugar
  • 1 teaspoon fresh oregano

Method

  1. Place tomatoes in a blender jar alongwith red chilli powder, paprika powder, basil and very little water. Puree till smooth.
  2. Heat butter in a non-stick pan. Add garlic and sauté till pink.
  3. Add pureed tomato mixture, stir to mix and cook till thick.
  4. Add salt, sugar, oregano, mix well and continue to cook for 2 minutes.
  5. Use as required.
