Ingredients list for Zatar Bread
- 2 cups + for dusting Refined flour (maida)
- 1 tablespoon Zatar Spice
- 1 teaspoon Fresh yeast
- a pinch Castor sugar (caster sugar)
- ½ teaspoon Salt
- 2 tablespoons Olive oil
Method
- Take yeast in a bowl. Add castor sugar and 2 tablespoons warm water, mix and set aside to activate.
- Take flour and salt in another bowl and mix. Make a well in the centre, add activated yeast and mix.
- Add some water and knead into a dough. Add 1 tablespoon olive oil and knead into a soft dough. Cover with damp muslin cloth and set aside to prove for 20-25 minutes.
- Preheat oven to 180° C.
- Transfer the dough on the worktop and knock back to release excess air. Divide into equal portions and shape them into balls.
- Dust the worktop with some flour, roll out each portion into ½ cm thick discs and place on a baking tray.Place the baking tray in the preheated oven and bake for 5 minutes.
- Take zatar spice in another bowl. Add remaining olive oil and mix well.
- Remove tray from oven, apply some zatar spice mixture on top, place the tray back in the preheated oven and bake for another 5 minutes.
- Serve hot.
