Ingredients list for Walnut Biscotti
- 1 cup Walnut Kernels chopped
- 115 grams Refined Flour diced
- 3/4 cups + tablespoons Castor sugar (caster sugar)
- 2 Eggs
- 1 tablespoon Walnut oil or olive oil
- 2 3/4 teaspoons Refined flour (maida)
- 1 1/2 teaspoon Baking powder
- 1/2 cup Whole wheat flour (atta)
Method
- Preheat the oven to 160°C/325°F/Gas Mark 3. Cream the butter and caster sugar in a bowl until light and fluffy. Add the eggs and walnut oil or olive oil and mix well.
- Sift the refined flour and baking powder together over the mixture in the bowl. Add the wheat flour and walnut halves. Mix well and knead into a soft, but not sticky dough. Shape the dough into four logs, seven inches long and two inches in diameter.
- Place the logs a little apart on the baking tray. Bake for about thirty five minutes or until golden in colour. Remove from the oven and transfer the logs to a wire rack to cool for about ten minutes .Slice each log diagonally into half inch thick slices.
- Place the slices on the baking tray for another fifteen minutes. Remove from the oven and transfer the biscotti to a wire rack to cool. Store in airtight tins.
