Ingredients list for Vibrant Tossed Veggies
- 2 medium Bell Peppers seeded and sliced
- 2 medium Asparagus seeded and sliced
- 1 medium Beetroot peeled and sliced
Method
- Place together in a bowl, capsicums, beetroot, zucchini, red cabbage and asparagus.
- Add oil, lemon juice and salt. Mix well and allow to marinate for thirty minutes. Heat the Grill Pan.
- Arrange the vegetables in it and cook till tender. Allow to cool a little and then serve.
