Ingredients list for Vibrant Tossed Veggies

  • 2 medium Bell Peppers seeded and sliced
  • 2 medium Asparagus seeded and sliced
  • 1 medium Beetroot peeled and sliced

Method

  1. Place together in a bowl, capsicums, beetroot, zucchini, red cabbage and asparagus.
  2. Add oil, lemon juice and salt. Mix well and allow to marinate for thirty minutes. Heat the Grill Pan.
  3. Arrange the vegetables in it and cook till tender. Allow to cool a little and then serve.
