Ingredients for Vibrant Tossed Veggies Recipe

  • Bell Peppers seeded and sliced 2 medium

  • Asparagus seeded and sliced 2 medium

  • Beetroot peeled and sliced 1 medium

  • Zucchinis sliced 2 small

  • Red cabbage shredded 1 small

  • Asparagus trimmed 3

  • Lemon juice 2 tablespoons

  • Oil 2 tablespoons

  • Salt


Step 1

Place together in a bowl, capsicums, beetroot, zucchini, red cabbage and asparagus.

Step 2

Add oil, lemon juice and salt. Mix well and allow to marinate for thirty minutes. Heat the Grill Pan.

Step 3

Arrange the vegetables in it and cook till tender. Allow to cool a little and then serve.
