The cuisine of Andhra Pradesh is reputedly the spiciest of all Indian cuisine. Foods include both the original spicy Andhra cooking and Muslim-influenced Hyderabadi cuisine. Rice is the staple diet and is used in a wide variety of ways.
Hyderabadi cuisine is influenced by the Muslim population, which arrived in Andhra centuries ago. Much of the cuisine revolves around meat. It is rich and aromatic, with a liberal use of exotic spices, ghee, nuts and dry fruits.

Ingredients for Vegetable Rava Uppuma Recipe

  • Semolina 1 1/2 cups

  • Green Peas 1/4 inch cubes 1 medium

  • French beans, 1/4 inch pieces 6-8

  • Cauliflower , small flotets 1 medium

  • Green peas 1/4 cup

  • Green capsicum, 1/4 inch pieces , seeded 1 medium

  • Salt to taste

  • Oil 5 tablespoons

  • Mustard seeds 1/2 teaspoon

  • Whole dry red chillies, broken 2

  • Split black gram skinless (dhuli urad dal) 2 teaspoons

  • Curry leaves 10-12

  • Green chillies, finely chopped 4

  • Onion , finely chopped 1 medium

  • Ginger, finely chopped 1 inch pieces

  • Asafoetida a pinch

  • Lemon juice 1 tablespoon

Method

Step 1

Roast semolina in a dry kadai without browning. Set aside to cool.

Step 2

Boil four cups of water in a deep pan, add little salt and boil carrot, beans, cauliflower and green peas for six to eight minutes or till the vegetables are almost done.

Step 3

Drain and set the vegetables aside.
