Ingredients list for U S Pears Salad
- 1 Pears
- to taste Fresh Mint Leaves
- 8-10 Fresh mint leaves
Method
- Quarter pear, remove core, slice thinly and put into a large bowl. Add salt.
- Have lemon, remove seeds and squeeze the juice of ½ lemon over the pear slices.
- Dry roast caraway seeds and set aside.
- Cut thin strips of green and red capsicum. Thinly slice onion. Remove seeds from tomato and then cut into thin slices. Slice an unpeeled cucumber. Put all these in the bowl with pear.
- To make the dressing, put crushed black peppercorns, salt, mustard paste and olive oil into a bowl. Squeeze the juice of ½ lemon into the bowl and mix well.
- Finely chop fresh red chilli and add to the dressing and mix well.
- Roughly tear iceberg, romaine and lollo rosso lettuce leaves and add to the large mixing bowl.
- Tear fresh mint leaves and add. Add roasted caraway seeds and the dressing and toss everything gently.
- Transfer into a serving dish and serve immediately.
