Ingredients
- 1 cup soya bean soaked , for 7-8 hours
- 2 tablespoons lemon juice
Method
- Drain the excess water and transfer the soya beans into a large bowl, add sufficient warm water And set aside for 30 minutes. Rub them between your palms to remove the skin. Add 1½ cups water, the skin should be floating on top. Discard the skins and water.
- Transfer into a blender jar and add 500 ml water, blend till smooth. Add 500 ml water and blend again till well combined.
- Line a strainer with 2-3 layers of muslin cloth and keep it over a large bowl. . Pour the soya bean mixture into this.
- Transfer this milk into a deep pan and place it on heat. Let it come to a boil, reduce the heat and let it simmer for 2 minutes.
- Mix lemon juice and 2 tbsps water in a bowl, add this mixture to the soya milk, stirring continuously. Cover and cook for 2 minutes. .
- Line another strainer with a muslin cloth, pour the curdled soya milk into it. Once most of the water has drained, gather the edges of the muslin cloth together and squeeze to remove the excess water.
- Place the strainer over another bowl, and keep the muslin cloth with the curdled soya milk into the strainer. Place a heavy object on top and set aside for 1 hour or till it becomes firm. Refrigerate till set.
- Cut and serve as required.
