By Sanjeev Kapoor 22 Sep 2015 in Recipes Course New Update Main Ingredients Bell Peppers, Cottage Cheese Cuisine Fusion Course Main Course Vegetarian Prep Time 16-20 minutes Cook time 26-30 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Veg Ingredients list for Three Pepper Paneer Bake 1 small Bell Peppers cut into 1/2 inch pieces 1 small Cottage Cheese cut into 1 inch pieces 4 Green capsicums halved lenghtwise 200 grams Paneer (cottage cheese) cut into ½ inch cubes 2 tablespoons Oil 1 large Onion chopped 2-3 cloves Garlic chopped 1 medium Leek chopped 4 tablespoons Tomato puree 1 teaspoon Red chilli flakes 1 teaspoon Dry mixed herbs to taste Salt 1/2 cup Cooked rice 1/2 cup Sweet corn kernels boiled 1 cup Cheese grated Method Heat two tablespoons of oil in a thick-bottomed pan; add onion and sauté over medium heat for two minutes. Add garlic and leek and continue to sauté for one minute. Add tomato purée, red chilli flakes and salt and continue to sauté for two more minutes. Add red and yellow capsicum, rice, corn and paneer and continue to sauté for another minute, tossing continuously. Add one-fourth cup of grated cheese, stir gently, remove from heat and set aside. Preheat the oven to 160ºC. Fill each halved green capsicum with the paneer and rice mixture and sprinkle with remaining grated cheese. Place the stuffed capsicums on a baking tray and bake for fifteen minutes or till capsicums soften slightly and the cheese melts. Serve hot.
