Thai Hot and Sour Soup

Just like the name suggests, this pungent hot and sour soup has all the flavours of Thailand. Chicken broth, kaffir lime leaves, lemon grass and Thai red chillies, with these great ingredients this soup is definably going to warm you inside and out!

Ingredients

  • 150 gms boneless chicken, boiled and roughly chopped
  • 4 cups chicken stock
  • 2-3 spring onion bulbs
  • 1 lemongrass stalk, 4 inch piece
  • 2-3 fresh red chillies
  • 6-7 button mushroom
  • 2 kaffir lime leaves
  • 2-3 medium tomatoes, finely chopped
  • 1 tsp fish sauce
  • 1 tbsp tamarind pulp
  • Salt to taste
  • Few fresh coriander leaves for garnish

Method 

  1. Heat chicken stock in a deep non-stick pan.
  2. Slice springonion bulbs, lemongrass, red chillies and mushrooms and add to the pan and bring it to a boil.
  3. Roughly tear kaffir lime leaves and add and mix well. Add tomatoes and mix well. Add fish sauce and tamarind pulp and mix well. Add salt and mix. Cook for 5-7 minutes.
  4. To serve, put some chicken in each serving bowl, pour prepared soup, garnish with coriander leaves and serve piping hot.
