Ingredients list for Thai Chicken and Mushroom Broth

  • 1 cup Chicken cooked and shredded
  • 100 grams Button mushrooms sliced
  • 1 tablespoon Thai green curry paste
  • 4 cups Chicken stock
  • 1 tablespoon Fish sauce
  • Juice of 1 lemon
  • 1 teaspoon Lemon zest grated
  • 1/4 cup Spring onion bulbs sliced
  • 2 tablespoons Spring onion greens chopped

  1. Pour chicken stock into a deep non-stick pan and put it on heat. Add green curry paste, fish sauce, lemon juice and lemon zest, mix well and bring it to a boil.
  2. Add mushrooms and spring onion bulbs, mix well, cover and simmer for two minutes.
  3. Add chicken and spring onion greens and simmer for two minutes more.
  4. Sever hot.
