Ingredients
- 1 cup chicken cooked and shredded
- 100 grams button mushrooms sliced
- 1 tablespoon thai green curry paste
- 4 cups chicken stock
- 1 tablespoon fish sauce
- Juice of 1 lemon
- 1 teaspoon lemon zest grated
- 1/4 cup spring onion bulbs sliced
- 2 tablespoons spring onion greens chopped
Method
- Pour chicken stock into a deep non-stick pan and put it on heat. Add green curry paste, fish sauce, lemon juice and lemon zest, mix well and bring it to a boil.
- Add mushrooms and spring onion bulbs, mix well, cover and simmer for two minutes.
- Add chicken and spring onion greens and simmer for two minutes more.
- Sever hot.
