Ingredients
- 2 cups corn kernels, boiled
- ¾ cup French beans, boiled and finely chopped + for garnishing
- Salt to taste
- 1 teaspoon sugar
- 1 teaspoon black pepper powder
- 1 teaspoon soy sauce
- 1 tablespoon cornflour/ corn starch
- 150 grams paneer (cottage cheese)
- 2-3 lettuce leaves
Method
- Place 1½ cups corn kernels in a mixer jar along with sufficient water. Blend and strain.
- Heat the corn juice in a non-stick pan, add French beans, remaining corn kernels, salt, sugar, black pepper powder and soy sauce and mix well.
- Combine cornflour and water to make a smooth slurry. Add this to the pan.
- Roughly chop cottage cheese in ½ inch cubes and add to the pan.
- Transfer the soup in a serving bowl, roughly tear the lettuce leaves along with French beans in a bowl. Serve.
