Ingredients list for Sweet Rice
- 1 cup Rice,cooked
- 2 tablespoons Unsalted butter
- 1/4 cup Sugar
- 1 cup + 4 Orange juice
- 1 tablespoon Raisins
- 8-10 Dates,chopped
- 8-10 Walnut kernels,crushed
- 1 1/2 teaspoons Cornflour/ corn starch
Method
- Melt butter in a wok, add rice and sugar and mix. Heat one cup orange juice in another pan. Add raisins and let it simmer on low heat. Preheat oven to 180°C. Grease a glass bowl or a small spring form tin.
- Mix dates and walnuts in a bowl and crush them with your fingers till they form a lump. Mix cornflour with two tablespoons of orange juice and add it to the pan with orange juice and raisins. Cook till the mixture thickens. Set it aside. Place half the rice mixture at the bottom of the spring form tin and even the surface.
- Place the walnut-date mixture in the center and press it down lightly. Cover with the remaining rice and even the surface. Sprinkle the remaining orange juice on the top and cook it in the preheated oven for fifteen minutes. Loosen the rice from the spring form tin and place on a serving dish. Top it with the orange-raisin sauce and serve.
