Ingredients list for Spicy Bean Rice

  • 1/2 cup Red Kidney Beans
  • 1 1/2 cups Rice
  • 10 French beans 2 cm pieces

Method

  1. Pick and soak red kidney beans for at least six to eight hours. Boil until soft, drain and keep.
  2. Boil French bean pieces in salted boiling water for two minutes, cool in chilled water and then drain. Soak rice in water for about twenty minutes.
  3. Drain and then boil in salted boiling water until done. Drain and keep aside. Heat oil, add chopped garlic and sauté till pink.
  4. Add boiled red kidney beans and French beans, mix well. Add cooked rice and mix. Add salt, pepper powder, red chilli flakes and soy sauce and mix lightly.
  5. Add chopped coriander leaves and vinegar and mix well. Serve immediately.
