Ingredients list for Spiced Light Apple Fool

  • 3 medium Apples peeled, cored and sliced
  • 1 Stick Cinnamon
  • 6 Cloves
  • 1/2 teaspoon Lemon rind
  • 2 1 inch stick Lemon juice
  • 1/2 cup Brown sugar
  • 2 cups Fromage Frais

  1. Tie cinnamon and cloves in a muslin cloth and place the bouquet garni in a saucepan containing one cup of water and bring it to a boil. Reduce heat and cover the pan, simmer the spices gently for fifteen minutes, then remove from heat.
  2. Add lemon rind and lemon juice and let it stand for fifteen minutes. Add sliced apples to the above liquid; add sugar and heat stirring till the sugar dissolves completely.
  3. When the syrup bubbles, reduce heat and cover the pan and simmer for twenty to twenty five minutes, stirring occasionally, until the apples are pulpy.
  4. Remove the lid and cook vigorously till the apples are cooked and the mixture is completely smooth and reduced slightly. Then remove the pan from heat.
  5. Cover the pan with a clean towel, as it will return condensation to the fruit.
  6. Cool it completely. Remove the bouquet garni and fold in fromage frais with the apple pulp.
  7. Divide the apple cream in glasses and garnish with apple fan. Serve chilled
