Ingredients
- 2-3 medium carrots, peeled and roughly chopped
- 1 fresh red chilli, chopped
- 4-5 black peppercorns
- 2 tbsps extra virgin olive oil
- 1 medium onion, sliced
- 1 tsp chopped garlic
- 1 small potato, peeled and roughly chopped
- Salt to taste
- A few sprigs of fresh coriander leave
Method
- Heat 1 tbsp olive oil in a deep non stick pan, add onion and garlic and saute for 1 minute.
- Add black peppercorns, potato and carrot and saute for another minute. Add salt and mix. Add fresh red chilli and mix. Add 2 cups water and mix.
- Heat remaining olive oil in a non stick pan. Finely chop a few sprigs of fresh coriander leaves.
- Cover the pan with carrots and cook till soft. Cool and transfer into a blender jar.
- Add coriander leaves to the other pan and switch off the heat.
- Blend the carrot mixture till smooth. Add a little water to adjust the consistency.
- Transfer the mixture into a jar and then pour into shot glasses. Garnish with the coriander leaves in extra virgin olive oil and serve.
