Ingredients

  • 2-3 medium carrots, peeled and roughly chopped
  • 1 fresh red chilli, chopped
  • 4-5 black peppercorns
  • 2 tbsps extra virgin olive oil
  • 1 medium onion, sliced
  • 1 tsp chopped garlic
  • 1 small potato, peeled and roughly chopped
  • Salt to taste
  • A few sprigs of fresh coriander leave

Method

  1. Heat 1 tbsp olive oil in a deep non stick pan, add onion and garlic and saute for 1 minute. 
  2. Add black peppercorns, potato and carrot and saute for another minute. Add salt and mix. Add fresh red chilli and mix.  Add 2 cups water and mix.
  3. Heat remaining olive oil in a non stick pan.  Finely chop a few sprigs of fresh coriander leaves. 
  4. Cover the pan with carrots and cook till soft.  Cool and transfer into a blender jar. 
  5. Add coriander leaves to the other pan and switch off the heat.
  6. Blend the carrot mixture till smooth.  Add a little water to adjust the consistency. 
  7. Transfer the mixture into a jar and then pour into shot glasses. Garnish with the coriander leaves in extra virgin olive oil and serve.
