Ingredients list for Roasted Leg Of Lamb With Garlic And Rosemary
- 1 Leg of lamb
- 1/4 cup Rosemary
- 3 tablespoons Fresh rosemary chopped
- 1 tablespoon Salt
- 2 teaspoons Black peppercorns coarsely ground
- 8 cloves Garlic minced
- 2 tablespoons Olive oil
- 2 Carrots roughly chopped
- 2 stalks Celery roughly chopped
- 2 medium Onions roughly chopped
Method
- Preheat the oven to 500°F. In a bowl mix together lemon juice, rosemary leaves, salt and coarsely ground black peppercorns. With the help of the pairing knife make small slits all over the lamb.
- Press the minced garlic into the slits. Rub the above mixture all over the meat and then coat it with olive oil. Grease a large roasting pan and then arrange the carrots, celery and onions on it.
- Put the leg in the pan and then put the pan in the oven and roast the lamb for ten minutes. Turn the lamb and roast for another ten minutes.
- Lower the temperature of the oven to 325°F and cook till the lamb is medium done or till slightly pink. Remove the lamb from the oven and cover it loosely with foil before slicing.
