Ingredients
- 15-18 tender medium ladyfingers (bhindi), washed
- 1 medium onion
- 15-20 shallots
- 2 tablespoons oil
- Salt to taste
- 2 teaspoons coriander powder
- 1 tablespoon cumin powder
- 1 teaspoon turmeric powder
- ½ teaspoon dry mango powder (amchur)
- 1 teaspoon red chilli powder
Method
- Discard the crown of the ladyfingers and cut into medium size pieces.
- Heat oil in a non-stick pan.
- Chop the onion.
- Combine salt, coriander powder, cumin powder, turmeric powder, amchur and red chilli powder in a bowl. Mix well. Add ladyfingers to the masala mixture and mix well. Set aside.
- Add chopped onion and shallots to the pan. Toss and add the ladyfingers. Set aside the leftover masala.
- Toss to mix and cook for 4-5 minutes. Add leftover masala and mix well. Cook for 2-3 minutes more.
- Serve hot.
