Ingredients list for Pumpkin Cake
- 3/4 cup pumpkin puree
- 1/2 grams brown sugar/jaggery
- 1/4 cup + for greasing Olive oil
- 1 cup Rolled oats
- 1/2 cup Buttermilk
- 3/4 cup + for dusting Refined flour (maida)
- 1/2 cup Sugar
- 2 Eggs
- 1/2 teaspoon Baking powder
- 1/2 teaspoon Baking soda
- 1/4 teaspoon Nutmeg powder
- 1 teaspoon Vanilla essence
- a pinch Salt
Method
- Preheat oven to 180°C. Grease an aluminium baking tin and dust with flour.
- Mix oats and buttermilk with milk in a bowl. Add pumpkin puree and mix well. Add brown sugar and sugar and mix again. Break eggs and add and whisk well.
- Sieve together flour, baking powder, baking soda, nutmeg powder and salt into the bowl and mix everything well.
- Add vanilla essence and olive oil and mix well.
- Pour batter into the baking tin and place in preheated oven. Bake for 30 minutes.
- Slice and serve.
