Ingredients list for Pista and Caramelized Apple Cup Cakes

  • 1/4 cup + to sprinkle Pistachio
  • 2 medium Apples chopped
  • 1 cup Refined flour (maida)
  • 1 1/2 teaspoons Baking powder
  • 1 cup Softened butter
  • 1 cup Castor sugar
  • 1 cup Brown sugar
  • 5 Eggs

Method

  1. Preheat oven to 180° C.
  2. Sift refined flour and baking powder into a bowl.
  3. Place softened butter in another bowl, add castor sugar and cream together till light.
  4. Place brown sugar in a pan, add chopped apples and 2 tbsps water, cover and cook.
  5. Break eggs and add to butter-sugar mixture and mix well.
  6. When brown sugar-apple mixture begins to caramelize, switch off heat and let it cool slightly. Add pistachios and mix well.
  7. Add this mixture to flour mixture and mix well. Add egg mixture and mix well.
  8. Pour the batter into muffin moulds till ¾ full. Sprinkle some pistachios on top.
  9. Bake in the preheated oven for 50 minutes. Remove from oven and let them cool slightly.
  10. Remove from the moulds and serve hot.
