Ingredients list for Pineapple And Rice In Lettuce Wraps

  • 2 Pineapple slices canned
  • 1/2 cup Cooked basmati rice
  • 4 Iceberg lettuce leaves
  • 1/4 medium Red bell pepper
  • 1/2 medium Cucumber peeled
  • 1/3 bunch Fresh coriander leaves
  • to taste Salt
  • 1/2 teaspoon Red chilli powder (deghi mirch)
  • 4 tablespoons Lemon juice
  • 2 tablespoons Honey
  • 1 1/2 tablespoons Extra virgin olive oil

Method

  1. Chop pineapple slices. Finely chop capsicum. Seed cucumber and chop roughly. Chop coriander leaves.
  2. Transfer all chopped vegetables and pineapple into bowl.
  3. Add rice, salt, red chilli powder, lemon juice, honey and oil. Mix well and chill in a refrigerator.
  4. Place some rice mixture in each lettuce cup and serve immediately.
