Ingredients list for Pineapple And Rice In Lettuce Wraps
- 2 Pineapple slices canned
- 1/2 cup Cooked basmati rice
- 4 Iceberg lettuce leaves
- 1/4 medium Red bell pepper
- 1/2 medium Cucumber peeled
- 1/3 bunch Fresh coriander leaves
- to taste Salt
- 1/2 teaspoon Red chilli powder (deghi mirch)
- 4 tablespoons Lemon juice
- 2 tablespoons Honey
- 1 1/2 tablespoons Extra virgin olive oil
Method
- Chop pineapple slices. Finely chop capsicum. Seed cucumber and chop roughly. Chop coriander leaves.
- Transfer all chopped vegetables and pineapple into bowl.
- Add rice, salt, red chilli powder, lemon juice, honey and oil. Mix well and chill in a refrigerator.
- Place some rice mixture in each lettuce cup and serve immediately.
