Ingredients list for Peppery Corns And Tomato Salad

  • 2 cups Corn kernels
  • 1 medium Yellow capsicum 1 cm cubes
  • 2 medium Green capsicum 1 cm cubes

Method

  1. Boil corn kernels in salted water until soft. Drain thoroughly and cool. You may also use precooked canned corn kernels or sweet corn niblets.
  2. Combine corn kernels, yellow capsicum, green capsicum, tomatoes and pineapple. Stir in lemon juice and add crushed peppercorns, salt, chopped green chillies and chopped mint leaves.
  3. Arrange in a serving dish and chill in the refrigerator before serving.
