By Sanjeev Kapoor 04 May 2016 in Recipes Course New Update Main Ingredients Green Peas, Cilantro Cuisine Fusion Course Soups Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Pea And Cilantro Pesto Soup 2 cups Green Peas frozen 2 Cilantro trimmed to taste Salt 1/2 teaspoon Lemon juice FOR PESTO SAUCE 2 cups Cilantro (fresh coriander leaves) stem removed 2 tablespoons Pine nuts(chilgoza) chopped 2 tablespoons Parmesan cheese grated 2 tablespoons Olive oil 2 tablespoons Lemon juice 2 cloves Garlic 1/4 teaspoon Salt Method To make the cilantro pesto, blend together cilantro, pinenuts, parmesan cheese, olive oil, lemon juice, garlic and salt till smooth. Boil two cups of water in a pan. Add the frozen peas, spring onions, salt and lemon juice and cook for ten minutes. Discard the spring onions and blend the peas with the four tablespoons cilantro pesto in a blender. Remove from the blender and serve with a drizzle of olive oil.
