Ingredients list for Pea And Cilantro Pesto Soup

  • 2 cups Green Peas frozen
  • 2 Cilantro trimmed
  • to taste Salt
  • 1/2 teaspoon Lemon juice
  • FOR PESTO SAUCE
  • 2 cups Cilantro (fresh coriander leaves) stem removed
  • 2 tablespoons Pine nuts(chilgoza) chopped
  • 2 tablespoons Parmesan cheese grated
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 2 cloves Garlic
  • 1/4 teaspoon Salt

Method

  1. To make the cilantro pesto, blend together cilantro, pinenuts, parmesan cheese, olive oil, lemon juice, garlic and salt till smooth.
  2. Boil two cups of water in a pan.
  3. Add the frozen peas, spring onions, salt and lemon juice and cook for ten minutes.
  4. Discard the spring onions and blend the peas with the four tablespoons cilantro pesto in a blender.
  5. Remove from the blender and serve with a drizzle of olive oil.
