Ingredients
- 200 grams cottage cheese (paneer), cut into ½-inch cubes
- 1 inch lemon grass, chopped
- 1 teaspoon oil
- 3 garlic cloves, chopped
- 4-5 cups vegetable stock
- 1 fresh red chilli, sliced
- Salt to taste
- ½ tablespoon lemon juice
- 2-3 stalks spring onion greens, sliced
Method
- Heat 1 teaspoon oil in a wok; add 3 chopped garlic and sauté over medium heat for half a minute.
- Add 1 inch chopped lemongrass and continue to sauté for half a minute.
- Add 4-5 cups vegetable stock and bring to a boil. Lower heat, add 1 sliced red chilli, salt and simmer, uncovered, for 5 minutes, stirring occasionally.
- Add 200 grams cubed paneer and ½ tablespoon lemon juice, stir and continue to simmer for 1 minute.
- Ladle soup into individual serving bowls, garnish with 2-3 sliced spring onion greens and serve hot.
