How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Paella Marinera Recipe

  • Paella Rice soaked 1 1/2 cup

  • Clams 10-12

  • Medium prawns (300 grams) 20-25

  • Fish fillet cut into 1 inch pieces 2

  • Olive oil 1/2 cup

  • Onion thinly sliced 1 medium

  • Tomatoes sliced 2 medium

  • Sausages sliced 2

  • Fish stock 3 1/2 cups

  • Paella spice-mix 2 teaspoons

  • Saffron (kesar) a few

  • Shelled green peas blanched 1/4 cup

  • Red capsicum cut into thin strips 1 small

  • Salt to taste

  • Lemon cut into wedges 2


Step 1

Heat olive oil in a paella pan or a wide non stick pan. Add onion and sauté for one minute. Add the rice and sauté for two to three minutes.

Step 2

Add one cup of water and let it cook. Add the tomatoes and stir. Add the sausages and stir again. Add the stock, sprinkle paella spice and saffron and let the mixture come to a boil. Cook for five minutes.

Step 3

Add clams, prawns, fish pieces and green peas and mix. Add red capsicum and salt and mix. Cover with aluminium foil. Reduce heat and simmer till the rice is done. You can also cook it in a preheated oven at 180°C till done. Ensure that the rice is not coo

Serve hot with lemon wedges.
