Ingredients  

  • 2 medium onions, sliced
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon butter
  • 1 tablespoon refined flour
  • 3 cups vegetable stock
  • Salt to taste
  • ½ teaspoon black pepper powder
  • 2 tablespoons finely chopped spring onion greens
  • 1 teaspoon lemon juice

Method

  1. Heat butter in a deep non-stick pan. Add onion and sauté till it turns light brown.
  2. Add thyme, mix and sauté on low heat. Add refined flour, mix well and sauté for a minute.
  3. Add stock, stir to mix and bring to a boil. Cover and simmer for 5 minutes.
  4. Add salt, pepper powder and stir to mix. Cover and simmer for 2 minutes.
  5. Add 1 tablespoon chopped spring onion greens and lemon juice and mix well. Switch off the heat.
  6. Transfer into individual soup bowls, garnish with remaining spring onion greens and serve piping hot.
