Ingredients
- 2 medium onions, sliced
- 2 tablespoons fresh thyme leaves
- 1 tablespoon butter
- 1 tablespoon refined flour
- 3 cups vegetable stock
- Salt to taste
- ½ teaspoon black pepper powder
- 2 tablespoons finely chopped spring onion greens
- 1 teaspoon lemon juice
Method
- Heat butter in a deep non-stick pan. Add onion and sauté till it turns light brown.
- Add thyme, mix and sauté on low heat. Add refined flour, mix well and sauté for a minute.
- Add stock, stir to mix and bring to a boil. Cover and simmer for 5 minutes.
- Add salt, pepper powder and stir to mix. Cover and simmer for 2 minutes.
- Add 1 tablespoon chopped spring onion greens and lemon juice and mix well. Switch off the heat.
- Transfer into individual soup bowls, garnish with remaining spring onion greens and serve piping hot.
