Ingredients list for Oat Muffins
- 2 cups refined flour (maida)
- Saffola Veggie Twist Oats 1 packet (40 grams)
- to taste Salt
- 1 teaspoon black pepper powder
- 1 tablespoon dill leaves finely chopped
- 1 cup spinach leaves chopped
- 1/2 cup green peas
- 1 medium green zucchini, grated
- 1/2 cup grated ricotta cheese
- 2 eggs
- 1 teaspoon baking powder
- 1/4 cup milk
Method
- Preheat oven at 180°C. Combine Saffola Veggie Twist Oats, salt, pepper powder, dill leaves, spinach, green peas, zucchini and ricotta cheese in a bowl. Mix well.
- Break eggs in another bowl. Add baking powder and milk and beat well with an electric beater. Add refined flour and mix well.
- Add egg-flour mixture to oats mixture and lightly fold till well mixed.
- Fill 8 individual silicon muffin moulds with the prepared mixture and place them on a baking tray. Put the tray in preheated oven and bake for 20-25 minutes.
- Remove from oven, demould and serve.
