This recipe is from FoodFood TV channel By Sanjeev Kapoor 11 Aug 2015 in Recipes Course New Update Main Ingredients Processed cheese, Boneless chicken breast Cuisine Mexican Course Snacks and Starters Prep Time 11-15 minutes Cook time 21-25 minutes Serve Taste Spicy Level of Cooking Moderate Others Non Veg Ingredients list for Mexican Cheesy Chicken 2/3 cup Processed cheese grated 450 grams Boneless chicken breast cut into bite sized pieces 2 tablespoons Olive oil 2 Garlic cloves finely chopped to taste Salt 1 cup Kidney beans 1/2 teaspoon Paprika 1/4 cup Fresh coriander leaves finely chopped 1/2 Lemon 1 small Onion diced 1 medium Red capsicum diced 2 medium Tomatoes diced 2 Jalapenos finely chopped 1/2 teaspoon Cumin powder 1/2 tablespoon Red chilli powder a few Corn chips Method Preheat oven to 180°C. Heat oil in a non stick pan, add garlic and chicken and saute till lightly coloured. Sprinkle salt. Grind rajma with a little of the water in which it was boiled, salt, paprika, coriander leaves, juice of ½ lemon and grind till smooth. Pour this into a baking dish. Add onion to chicken along with tomatoes, red capsicum, jalapenos, cumin powder, red chilli powder and mix. Transfer this into the baking dish over the rajma sauce. Place corn chips all around the edges of the dish. Sprinkle cheese and bake in the preheated oven for 10-15 minutes or till chicken gets cooked and cheese bubbles.Serve hot.
