Ingredients
- 4-5 sweet potatoes, peeled
- 1 teaspoon Thai red curry paste
- Salt to taste
- 2 tablespoons butter
- 1/4 cup fresh cream
- Spring onion greens cut into thin strips for garnish
Method
- Roughly chop sweet potatoes and put in a deep non-stick pan. Add sufficient water and salt and cook.
- Add red curry paste and mix well. Cover and cook till the sweet potatoes turn soft.
- Strain the liquid and put the potato pieces back in the pan on heat and mash with a masher.
- Add butter and cream and mix well. Switch off heat.
- Serve hot garnished with spring onion green strips.
