Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Malai Peda - SK Khazana Recipe

  • Whole milk 1 litres

  • Castor sugar 1/2 cup

  • Citric acid a large pinch

  • Cornflour 2 teaspoons

  • Almonds slivers for garnish

  • Pistachio slivers for garnish

  • Saffron strands for garnish

Method

Step 1

Heat milk in a deep non-stick pan. When it comes to a boil, reduce heat and simmer till it is reduced half its original volume.

Step 2

Add castor sugar, mix and bring to a boil.

Step 3

Mix citric acid in 2 tablespoons water, add, mix and cook till it curdles slightly.

Step 4

Mix cornflour in 2 tablespoons water, add, mix well and cook till the mixture thickens and resembles khoya. Remove from heat and cool.

Step 5

Divide the mixture into equal portions, shape into small balls and flatten into pedas.

Step 6

Garnish with almond slivers, pistachio slivers and saffron and serve.
